Vanilla cupcakes with vanilla buttercream

Makes 12 (It may make more or less depending on the size of your cupcake tin)

For the cupcakes you will need

188g butter

188g sugar

2 eggs

188g self raising flour

2/4 teaspoon bicarbonate of soda

2 tablespoons milk

1 teaspoon vanilla extract/ bean paste


For the buttercream you will need

250g unsalted butter

500g icing sugar

1/4 teaspoon salt

1 teaspoon of vanilla extract/ bean paste

2 tablespoons cooled boiled water


Method

-Preheat oven to 170'C

-Mix the sugar and butter together

-Add one egg in one at a time

-Add the sifted flour and bicarbonate of soda and mix well

-Add the vanilla extract and milk and fold to combine

-Divide the batter into into your cupcake cases and bake for 18-20 minutes or until a skewer comes out clean

-When baked, leave to cool on a cooling rack

-In a clean bowl, beat the butter until soft -Add sifted icing sugar and beat until well combined

-Add the vanilla and the water, a little at a time until you get the desired consistency -Decorate and enjoy


Tips

-Ensure your ingredients are at room temperature before you start

-Use an electric kitchen scale to measure all your dru ingredients

-A wooden spoon can be used for the cupcakes but for the best results, use a hand or stand mixer for the buttercream --To make a different flavour, simply swap the vanilla to something else such as fresh lemon zest, 1 tablespoon of fresh black coffee, etc

-Use a piping bag with your favourite tip

-To colour your buttercream, use a gel based colour
