LEMON DRIZZLE CAKE

I've got another quarantine recipe for you so if you've managed to get some eggs, flour and have a lemon to hand then this is a great recipe for you try. Its super easy and super delicious so if you have any kids in your household, get them involved, this can be fun for everyone regardless of their age!!


What you will need (equipment wise) is a wooden spoon, a sift, a mixing bowl, a grater (use the finest side), a kitchen scale and a 2lb loaf tin/ a small cake tin (such as a 6 inch in diametre).


INGREDIENTS NEEDED:

225g Butter

225g Sugar

4 Eggs

1 Unwaxed Lemon

225g Self Raising Flour (sifted)

85g Icing Sugar (sifted)

1-2 Teaspoons of Freshly Squeezed Lemon Juice

*1 Teaspoon of Sugar

*4 Tablespoons of Lemon Curd

METHOD:

Preheat your oven to 170'C.

Prepare your tin by greasing it with butter and lining it with some baking paper.

In your mixing bowl, cream your butter and sugar together until light and fluffy.

Add your eggs in one at a time, mixing well in between each addition.

Rinse your lemon and pat dry. Get your grater and zest the lemon straight into the mixing bowl ensuring not to zest the white part, when you have done this, cut the lemon in half and squeeze the lemon juice out adding 1 teaspoon to the mixture and set the rest aside.

Add flour to the mixture and mix well.

Pour batter into your prepared cake tin.

Bake for 40-50 minutes or until skewer comes out clean.

As soon as your cake comes out of the oven, start making your drizzle.

Sift your icing sugar into a bowl and add your freshly squeezed lemon juice and mix well.

Use your skewer to make several holes into the cake and pour the drizzle all over the top, *sprinkle a teaspoon of sugar directly over this.*

*When completely cooled, use a serrated knife and slice the cake horizontally and add some lemon curd filling inside and sandwich the cakes back together.*

Store in an airtight container and consume within 3 days.

TIPS:

-You can replace the butter with a good quality soft spread (avoid high water content ones).

-Ensure that all your ingredients are at room temperature, this will make mixing them that much easier.

-Lemons can be replaced with lime, orange or any other citrus fruit, please ensure that you wash them really well with warm water before you use them.
